If you're going to spawn the Dark Beet, do it well away from any structures you might have. My fight now usually takes about a minute, maybe 90 seconds. I tend to just stick as close to the boss as possible and attack with a sword, healing when I need to. My recommended strategy would be to create an island (mine is at the top right corner with 5 water tiles between it and land in each direction), place ballistas if you want, and spawn in the King Slimes. The arena was mostly to control the additional skeletons, as they won't attack you and tend to wander off elsewhere. The arena is made of brick walls and covers almost two map squares, but you probably don't need that much space. I did build an arena for the Skeleton King, and placed some Ballistas in the corners.
